Home made Baileys

There is always an occasion for a toast, especially in the Advent season we are now experiencing. I like to sweeten the pre-Christmas time with homemade Baileys with friends or family. Its preparation is easy and it tastes incredibly good.

Ingredients

  • 1 condensed milk (Salko)
  • 1 almond pudding
  • 700 ml milk
  • 30 g sugar
  • 300 ml rum
  • 1 teaspoon almond flavouring

Method

  1. The day before, boil the condensed milk for the caramel. Boil for 2 hours in water, then leave the still sealed tin to cool and set until the next day. Or you can buy ready-made caramel in a tin.
  2. Cook the almond pudding in 700 ml of milk. Add 30 g of sugar. Once cooked, stir regularly until completely cooled.
  3. Place the cooled cooked pudding, caramel, rum and almond flavouring in a blender. Blend until all ingredients are fully combined.
  4. Pour into a bottle and store in the refrigerator.

Oat cookies

Advent is the time of the year when most of us are busy baking Christmas cookies. I’d like to share  a recipe with you, which you can bake all year round, for example for Sunday coffee or for the kids’ snacks. This recipe is the equivalent of healthy baking that tastes great for big and small.

Ingredients

  • 25 dkg oat flakes
  • 15 dkg semi-coarse flour
  • 20 dkg softened butter
  • 10 dkg sugar
  • 1 tbsp honey
  • 2 eggs
  • ½ baking powder
  • 15 dkg of mix of your own taste (candied fruit, raisins, dates, dried apricots, nuts, chopped chocolate, seeds)

Method

  1. Mix 15 dkg of the mixture of nuts, dried fruits and seeds according to your taste and then cut everything into smaller pieces.
  2. In a larger bowl, use your hands to combine all the other ingredients and add the nut mixture.
  3. Using a spoon, scoop the dough and make lumps on a greased baking sheet. There is no need to shape them,   they will spread a little on the oven.
  4. Bake at 175 °C for about 15 minutes until golden brown.
